Super Easy, Yummy, Freezable Cookie Dough!
Every year I freeze cookie dough in perfect cookie portions so that I can bake cookies anytime during the holidays and as many as I want. If I am being totally honest there have been many times that the kids have gone to bed and Shaun and I bake just a couple cookies for ourselves and it is AWESOME. I am sharing my two favourite recipes with you below!
PEANUT BUTTER AND M&M COOKIES
INGREDIENTS
- 1/2 cup (1 stick or 115g) salted butter, softened to room temperature
- 1/2 cup (100g) packed light brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 3/4 cup (185g) creamy peanut butter
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon baking soda
- 1 and 1/4 cups (160g) all-purpose flour
- 1 and 1/2 cups (300g) M&Ms
INSTRUCTIONS
- Pre-heat oven to 350 degrees
- In a large bowl, using a hand-held mixer or stand mixer with paddle attachment, cream the butter and sugars together on medium speed.
- Mix in the peanut butter, egg, and vanilla (in that order).
- Slowly mix in the baking soda and flour. Do not overmix.
- Fold in the M&Ms with a wooden spoon. Chill the dough for at least 30 minutes.
- Drop chilled dough by tablespoonfuls onto ungreased cookie sheet or silicone baking mat. Press the balls down (only slightly) since they won’t spread much while baking. Bake for 8-9 minutes. Cookies will be soft and may appear undone. They will firm up as they cool.
- Allow to cool completely on a wire rack.
- If you are freezing these cookies: Form into balls and freeze on a cookie sheet. After frozen remove and add to a Ziploc freezer bag. They will last for a couple months in freezer, just take out and bake as you please
MARS/SNICKERS COOKIES
INGREDIENTS
- 3 1/2 cups flour
- 1 1/4 tsp baking soda
- 1 1/2 tsp baking powder
- 3/4 tsp salt
- 1 1/4 cups real unsalted butter
- 1 1/4 cups dark brown sugar
- 1 cup plus 2 Tbsp sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 1/2cups of chopped Mars or Snickers bar
INSTRUCTIONS
- Preheat the oven to 350 degrees.
- Combine flour, baking soda, baking powder and salt. Mix to combine and set aside.
- Using paddle attachment on mixer, cream butter and sugars together just until blended.
- Add eggs, one a time, mixing well after each addition.
- Add the vanilla.
- Put mixer on low speed and add in dry ingredients.
- Mix until just combined. Do not overmix.
- Stir in chopped chocolate bar by hand.
- Place on cookie sheet and bake for 15-17 minutes. I like mine to look a little undercooked in the middle, then let them finish cooking on the cookie sheet for a few minutes while they cool. Then move them to a cookie rack or plate to keep cooling.
- If you are freezing these cookies: Form into balls and freeze on a cookie sheet. After frozen remove and add to a Ziploc freezer bag. They will last for a couple months in freezer, just take out and bake as you please
