Quinoa Salad using Ontario Greenhouse Vegetables
Did you know that Ontario has over 220 greenhouse farms that are able to grow fresh veggies through every season? It’s amazing to believe that growers in Ontario can produce cucumbers all year round and tomatoes and peppers February to December. This means that if you are in Ontario, you can find fresh veg at your grocery store, grown right here in our own province.
On the Ontario Greenhouse Vegetable Growers website, they have easy recipes that you can make at home. Shane and I decided to put a spin on the village salad found HERE to pre-make a filling and healthy lunch for during the school week.
Ingredients:
- ½ Ontario Greenhouse cucumber
- 1 Ontario Greenhouse tomato
- 1 Ontario Greenhouse yellow pepper
- 1 Ontario Greenhouse orange pepper
- 2 cups of cooked Quinoa
- 1 can of chickpeas, drained
- ⅓ cup Avocado Oil
- Salt and Pepper
Chop all the vegetables into bite sized pieces. In a large bowl, combine vegetables with cooked quinoa and chickpeas. Add avocado oil and salt and pepper to taste. Then refrigerate and eat through the week. Shaun and Shane like to add a little hot sauce to theirs to give it a little kick.
Store any leftovers in an air-tight container in the fridge.
