Leftover Chicken Casserole
I am a BIG fan of having the ability to make a meal stretch as far as it possibly can! Feeding a family of four can get expensive so we really do try to do it on a budget! Like many other families in the burbs we are members at Costco and the other day bags of 2 whole chickens were on sale – so of course we had to get them.
Dinner Day 1 was a super yummy whole chicken with stuffing done in the slow cooker. Thank goodness for the slow cooker 🙂
Dinner Day 2 was a Chicken Casserole. The best part of this casserole is there are really no rules and I often just use what I have in my fridge.
So first I clean all of the left over chicken off of the bones. It worked out to be about 2 cups.
Then I added some red and yellow peppers. Now this is just what I had in my fridge at the time. This can be anything from onion to a frozen mixed veggies.
Then I decided to steam some cauliflower that I had (broccoli would be just as good) Once steamed I cut into small pieces.
Next on the list I cooked some rice. (Can be substituted with a pasta)
Now for some flavor. I love any creamy soup – this time I used the Cream of Mushroom but any creamy soup will do. I then decided to add a little curry powder and salt and pepper. I have also used cheese before and not the curry powder. (no cheese in my fridge)
So it may not be the prettiest of meals but man is it ever yummy and filling!
Best thing about this is the one chicken lasts 3 meals as the left over casserole goes to work with my hubby for lunch the next day 😉 Total Score. You really can't go wrong with a chicken casserole! Just throw a whole bunch of yummy ingredients together and enjoy!
