Egg-cellent Recipes for Easter
With Easter just around the corner and being ambushed by mini chocolate eggs everywhere I can't help but want some healthy but super yummy food in my life. What better food to turn to than the healthy eggs from right here in Ontario.
I was in need of a serious change with my breakfasts, I love eggs but just don't have the time to make my favourite omelet. I leave my house at 6:20am everyday so I don’t exactly have a bunch of time, I literally just grab and go. I found that more often than not I was having a super carb heavy breakfast but still ended up being hungry way before lunch. I saw someone on my Facebook feed talking about egg muffins so I decided to give them a try. My best advice is make them with whatever you would love to eat in an omelet.
That’s it! Once cooled I pack them into containers to bring to work with me though the week. I just heat them up for 25 seconds in the microwave and I have an awesome breakfast!
I usually make these on a Sunday, put them in the fridge and then have breakfast to go for the entire week!

I make similar egg muffins up at the cottage and everyone loves them. I line the muffin cup with slice of deli turkey and sprinkle the top with some shredded cheese for the last few minutes of baking.

Can you come make me these? I am a huge egg muffin fan, but my laziness always kicks into high gear when it comes to actually making things I love!!!
