Easter Baking and an AWESOME Contest with Flavour.ca

With Easter just days away I find myself wanting to get into the kitchen with the kids to make some fun Easter baking.  I decided to bake some Chocolate Chip cookie baskets and let the kids go wild with decorating!  Although not the prettiest we certainly had tons of fun!  

There is a Flavour Hunt CONTEST happening now on Flavour.ca and this is my take on some fun and easy Easter baking! 


Coloured Coconut (1)



  • sticks (1 cup) unsalted butter softened
  • cup brown sugar
  • 1/3 cup granulated sugar
  • large eggs
  • teaspoons Club House Vanilla extract  
  • 2 1/2 cups all-purpose flour
  • teaspoon baking powder
  • teaspoon baking soda
  • 3/4 teaspoon salt
  • cups your choice of chocolate chips


  • Shredded coconut
  • Your choice of Club House Food Coloring
  • Cake Mate icing
  • Chocolate eggs or jelly beans


Preheat the oven to 350 degrees F. Spray upside down muffin tray with olive oil or non-stick spray. 

Cream together the butter and sugars in a mixing bowl, mixing until light and fluffy,

Mix in the eggs one at a time, and then the vanilla until combined and smooth. 

Whisk the flour, baking powder, baking soda and salt in a separate mixing bowl.

Slowly incorporate the dry ingredients into the wet ingredients. Stir in the chocolate chips.

Take a heaping tablespoon of batter and form it loosely over the top of the muffin pan.  Place muffin pan on middle rack and let back for 12-15 minutes. 

Remove cookies and let cool completely before removing from muffin tin.  You may want to bake cookies a little longer than you would to ensure they will be hard and not soft.


Separate coconut into small containers and add 4-6 drops of food coloring depending on desired color.  Put lid on container and shake to spread the food coloring.  Coconut is now used as decoration at the bottom of the cookie basket.

Let your kids decorate their cookie baskets with Cake Mate Icing and treats to fill the baskets!

The kids had a total blast decorating with the Cake Mate Scribblers – they are the perfect size for their little hands.  Dying the coconut was super easy and great for decorating not only the cookies but the plate as well!
