Pan Fried Coconut Salmon
I'll be honest, I surprised myself with this main dish and hope you will have the same success I've had. I did not measure a thing which makes it even worse but it did come out great!! I did my best to measure but I'm more of a do what you feel like chef and luck is generally on my side,"I've got that feeling". Make sure you have some music you can feel to get into "chef mode" and get your ingredients ready.

- lemon Juice
- coconut oil
- non-salted butter
- fish seasoning
- slab/filet of salmon
- canola oil
The process:
Before you start, fill the kettle and turn it on. You'll understand later. Clean your fish, always. Season lightly with fish seasoning the one I use is from Spice it up and make sure you cover both sides. Get a large frying pan lightly oiled and heated to max. You want to sear your fish so it holds together and gets you that nice fried flavor. After about 4 – 5 minutes or sooner depending on your stove top check that your fish is browning as expected. If it's ready, flip it and check sooner on the second side. Reduce heat to medium low and through in the chopped onion. about 4 sprigs of thyme, add about 4 tbsp of butter, add three or more tbsp of coconut oil or match the amount of butter added. Add hot water from the kettle till it's about halfway up the fish filet. Drop in a pepper set the kitchen timer for 10mins and reduce heat to a simmer. Let sit for 5mins then serve (I had a taste first prior to sharing)
